Wow! What a busy week we have had!
Having had a visit from one of the UKs leading caterers, bringing with them a team of twelve selectors and key decision makers! It was down to our team here to wow them with some of our new and exciting wedding canapés. We arranged the tasting around their brief of dietary requirements, so we were mainly looking at vegetarian, vegan, and gluten free options. Quite often the ‘special diets’ get over looked so we were looking to show them some new and varied canapés, alongside some of our popular favourites.
One of our long-standing and still most popular canapés is traditional mini fish and chips, made with hand cut and battered cod, served with mini chips within a cone. As a vegetarian twist to this we have created chilli dipped battered halloumi to replace the cod. This proved very popular with our guests, with a kick of chilli really bringing it to life. Another popular canapé that we recreated was our chicken balti served on a mini naan bread. With this we replaced the chicken with diced cauliflower, an excellent replacement that was complimented by the balti flavour. This could also be made gluten free by replacing the naan with gluten free naan.
Something new! Beetroot.....
Compressed beetroot served as a gateau with alternating layers of beetroot and goats cheese, served with a horseradish cream topping.
As times change we also try to keep up with current trends, one of those at the moment is towards street food. With this in mind we have developed a range of wrap based canapés that are still functional and easy to eat. These come in a range of flavours including Korean Prawn, Mexican Red Pepper, Beef Randang, Wasabi and Sesame Halloumi.
